Pajeri Terung Sedap!

Ingredients:

2 Small Brinjals( I always get Organic ones as they are smaller in size)
2 tbs shallots paste
1 tbs garlic paste
1 tbs chilli paste (optional)
Rempah 4 beradik–kulit kayu manis, bunga lawang, buah pelaga and bunga cengkih
Few biji sawi (black pepper)
2 tbs brown sugar and salt to taste
1tbs kerisik (coconut paste)
100ml coconut milk(diluted)

Method:

Cut brinjals into smaller bite pieces and soak under water while you prepare other things to cook.

Heat oil and stir fry all the paste, chilli, garlic and shallots and also rempah 4 beradik including biji sawi until fragrant. Add in brown sugar and salt to taste. Pajeri is meant to be a bit sweeter so be generous on the sugar heheheh… Now u can stir in coconut milk, coconut paste and brinjals. Cook until the gravy thickens and serve hot!
