My Banana Chocolate Chips Muffin

This is another muffin recipe for my fren or any other viewers who thinks baking is a difficult thingy to do heheheh...

1/2 cup softened butter/ margarine
1 cup brown sugar
1 large egg
1 cup ripe banana (mashed)
1 teaspoon soda bicarbonate
2 tablespoon hot water
1 1/2 cup multipurpose white flour
1/2 teaspoon salt
1/4 cup chocolate chips

Diced bananas and chocolate chips for decorations

Method:

Beat butter and sugar until soft and creamy then add in egg and mashed bananas. mixed soda with hot water and pour in the batter. Fold in the flour, salt and chocolate chips into the mixture and mix well. Scoop mixture into greased muffin tin and bake in a preheated oven 180 degrees celsius/360 degrees fahrenheit for about 20 minutes or until well risen and cooked.

Seriously its super easy to make yet delicious heheheh...

My Blue Berry Muffin

This recipe is for my good fren who's looking for a simple muffin recipes...

2 Cups of Multipurpose white flour
1 tablespoon baking powder
1/2 teaspoon salt
6 tablespoon softened butter/ margarine (room temperature)
1/4 cup brown sugar
2 large eggs
1 cup blue berries(canned - drained, or fresh berries)
1/2 cup milk
1/2 cup cream

Method:

Sift flour, baking powder and salt in a bowl and put aside. In a separate bowl beat butter and sugar until creamy and add eggs one by one beat again until well blended. Add in the berries and fold in the dry ingredients, milk and cream. Scoop batter into a greased muffin tray and bake in a preheated oven at 180 degrees Celsius/360 degrees Fahrenheit for about 25 minutes or until they are well cooked.


Tips:
Bake the muffins in the middle of the oven; too low will burn the bottom part of the muffins and too high will harden the muffins. Just fold in the dry ingredients until mixed well do not beat or else it will harden the muffins once baked.

Me and My Bakings...










Lastnite I was baking my cupcakes and snap some pictures while baking them. At first the plan was to make plain Vanilla cupcakes, Just to fill my cravings hehehhe.... After I filled the batter in mini cups they are off to the oven for about 15 mins or so.






Diya was very patient with me lastnite she didnt make so much fuss and watch cartoon most of the time, lucky me... With her behaving not bad lastnite i decided to make some designs on my cuppies...






After the cakes are done from the oven then let them cool little bit and pump in the jam. You can use any filling you like, I sometimes make chocolate cream filling..... yummy...







I used my vanilla cream frosting to frost the cakes I baked, put some bright colours and .... WALLAH... my cupcakes are ready!

Mumy & Diya...


Look at her big round eyes... like mine? heheheh... Today i brought her to playland just for her to mix around with other kids. I worry if she stays too much at home she will be the passive type of children where at school or anywhere she will just sit at one corner and never mix around.
I can still remember during my school time some kids will just sit quietly even when the teachers keep calling their name just to take the attendance!
She had a really good time and also improved some of her climbing skills, running skills and also mixed well with other kids... Of coz I'm ALWAYS around monitoring her just in case she falls down or other kids gets rough with her. She understands more of things she can or cannot do and listen to me more which I think its very good. I feel so lucky that I can always guide her around things. She is a very lucky girl.

Diya Now Walking




Diya now can walk. All she does the whole day is walk, walk... and more walking.
Sometimes she stayed up so late at night just to circle around the house to walk hehehhe... She looks so cute and funny walking all over the house. Recently I brought her to the mall and she got so excited and started running around since the place is huge. Once there was a mini band playing Gypsy songs and she started to dance around on the concourse and a few people started recording her on their mobile and digital cameras... so funny.
I really cant be apart from her. She is always with me. Sometimes I wonder is it me being selfish not able to let her go? I mean send her to nurseries and stuff... I always bring her out to mix with other kids still I monitor all the time... I got her all the learning CDs and watch with her while teaching and guiding. Is it good enough? Do i need to send her for classes? I think she is too young to have formal educations rite?...........
